Richardson draws on past training

Richardson immediately realises that he needs to be smart with his limited knife uses, and promptly lines up four lemons in a line, slicing them all apart with a single cut.

As he continues to slice through lemons, Antoine warns Richardson to be careful that he doesn’t slice his fingers. Richardson informs Antoine that he used to be a chef (he was the co-owner of a restaurant called Terrasses Bonsecours for five years).

Richardson is apparently of the same philosophical school of thought as Virginie – that the bowl is in the bowl – as he builds his lemon tower on top of the overturned bowl.

Richardson uses what is presumably his final cut to stab the knife all the way down through his lemon tower, holding everything together on top of the bowl.

Richardson builds a 31cm lemon tower – including the bowl – and earns second place.
